Watermelon Daikon and Cucumber Refresher

I don’t know about you but the first week in January can be really tough! When the alarm went off on Monday, I realized I not only had to get back in the work saddle but also get back on my normal routine which includes hitting the surf, getting myself to yoga a few times a week and (gasp) eating healthy.

I find that one of the best ways to get back on the healthy eating circuit after a long couple of weeks of holiday goodies is to get a bunch of high quality, fresh produce back in the kitchen. Away with the cookies and bring on the carrots!

If you’re looking to detox, refresh and start anew, try this amazing veggie juice blend. watermelon daikon and cucumber

Ingredients:

  • ½ cup apple juice
  • 1 watermelon daikon chopped
  • ½ carrot peeled and chopped
  • ½ cucumber peeled and chopped
  • 1 apple sliced into eighths and cored
  • ¼ cup parsley
  • ½ celery chopped
  • ¼ cup ice

Place all ingredients in your Blendtec or juicer and blend em up! Enjoy.

Drink Your Vegetables!

I know how difficult it can be to get kids to eat their greens each day, but let’s face it, most of us adults struggle to get our recommended servings each day.  And we have so many excuses – not enough time, always on the go, I skip lunch, I skip breakfast – trust me, I’ve tried them all.

Sweet Veggie Smoothie Blend:

  • 1 cup apple juice
  • 1 cup of sliced apple
  • 1/4 cup applesauce

  • a dash of nutmeg or cinnamon

Blend this vegetable smoothie until smooth.

Greener and Meaner Smoothie

  • 1  Carrot (chopped)

  • 2  Handfuls of Spinach
  • 1  Apple (chopped)
  • 2  Oranges (peeled and quartered)
  • Orange Juice to dilute

Blend this vegetable smoothie until smooth.

Sneaky Smoothies: Healthy Smoothies for Picky Eaters

As a parent, you have to get accustomed to hearing “ewww gross” in the kitchen from time to time.  And while my smoothies are generally a big hit with my kids, an “ewww gross!” or two will occasionally happen when I make a smoothie that’s a bit too healthy tasting.

If you have a picky eater on your hands but want to encourage them to get more fruit or veggies in their diet, smoothies can be a great way.  I often use them as nutrition in disguise – blend some fruits, veggies, seeds, nuts, with a little yogurt, honey or juice to sweeten the deal – and kids will never know that what they are drinking is actually good for them.

picky eaterHere are a couple of smoothie recipes that have the official Picky Eater Stamp of Approval:

Vitamin C Slush

1 cup orange juice

2 pineapple rings

1 very ripe banana

2 tbsp. cream of coconut

1 tsp. milled flax seed

1 carrot or sweet potato cube

Antioxidant Rainbow

1 cup Zola  Açaí Original Juice

1/4 cup raspberries

2 tbsp. cooked beet pieces

1/4 avocado

3/4 cup orange juice

1tbsp. honey

Directions

  • Blend together all ingredients in a blender until smooth.
  • Divide among glasses; serve cold.
  • Enjoy!
